Nutrition Education in Fisheries·Maritime and General High School Students

Abstract


The purpose of this study consists in analyzing the reality of processed food intake by students in different educational environments such as fisheries high schools and general high schools and their awareness of food additives and investigating the reality of nutrition education. In order to achieve this purpose, we selected a total of 400 students as the subjects of this study from fisheries high schools located in Busan, Gyeongi, Gyeongbuk, Chungbuk and Jeonnam and general high schools located in Busan, Gyeonggi and Jeonnam.
Data were collected after the students answered a survey and 388 completed copies of 400 were used for the final analysis, in which the frequency analysis, the cross tabulation analysis, the chi-squared test, the t-test and Pearson's correlation analysis were conducted by using the SPSS 19.0 program.
The findings of this study are summarized as follows.
First, as a result of analyzing the processed food intake state of high school students in fisheries·maritime high schools and general high schools in the intake frequency of the processed food of male and female appeared to be higher in female students than in male students. According to this result, it is analyzed that the higher intake frequency of processed food by female students is related to the study result that the female hormone stimulates the appetite. For the school type, the intake frequency of processed food of high school students in fisheries·maritime high schools and general high schools appeared to be almost similar. According to this result, it is analyzed high school students in the fisheries·maritime high schools and general high schools eat the processed food due to the agony or stress related to the schoolwork, employment, or college entrance.
Second, although most male and female students recognized the food additives were unsafe substances, they did not consider the safeness or nutrition when buying the processed food. Therefore, it is analyzed the awareness and knowledge of students on the food additives were a little inadequate.
Third, as a result of analyzing the nutrition education state, the number of students who did not receive the nutrition education was bigger than one of students who received the nutrition education. Although the nutrition education time was very short, students answered receiving the education was helpful to buying the food. According to this result, it is analyzed the systematic nutrition education was necessary in the school and household for the physical, mental health of adolescents.
Through the above study result, it is necessary to have a right awareness on the food additives for adolescents to buy healthy processed food and have a desirable eating habit as it is difficult to entirely exclude the processed food intake by adolescents.
Therefore, the systematic education is necessary to develop various educational materials and educational methods on the food additives, and for students to cultivate the knowledge and discernment about the food additives.
