2019년 부산지역 유통 수산물의 중금속 함량 및 위해성 평가
- Abstract
- This study was performed to survey and evaluate heavy metal contents and potential health risks of seafood distributed in Busan in 2019. A total of 156 samples was analyzed: 107 samples of fish, 17 samples of shellfish, 17 samples of cephalopod, and 15 samples of crustacean. Concentrations of heavy metals were measured by using mercury analyzer, microwave oven and ICP-MS. The concentrations[mean (min-max) mg/kg] of heavy metals in fishes were as follows : Pb = 0.0223(N.D-0.4897), Cd = 0.0027(N.D-0.085), Hg = 0.0687(N.D-0.3040). The concentrations[mean (min-max) mg/kg] of heavy metals in the shellfishes were as follows: Pb = 0.0741(0.0201-0.2286), Cd = 0.3150(0.0260–1.8095), Hg = 0.0087(0.0020-0.0230). The concentrations [mean (min-max) mg/kg] of heavy metals in cephalopoda were as follows: Pb = 0.0564(N.D-0.3550), Cd = 0.1619(N.D–1.2743), Hg = 0.0287(0.0040–0.0628). The concentrations[mean (min-max) mg/kg] of heavy metals in crustacean were as follows: Pb = 0.0099(N.D–0.0367), Cd = 0.3762(N.D–2.6070). After the average contents of heavy metals in fishery products were determined, the risks of these heavy metals were evaluated. The average weekly intakes of Pb and Hg by the fishes were 0.22% and 4.66% individually, as compared with PTWI (Provisional Tolerable Weekly Intakes) established by JECFA(Joint FAO/WHO Expert Committee on Food Additive) for Food Safety Evaluation. The average monthly intake of Cd by the fishes was 0.11%, as compared with PTMI (Provisional Tolerable Monthly Intakes) established by JECFA(Joint FAO/WHO Expert Committee on Food Additive) for Food Safety Evaluation. The average weekly intakes of Pb, Hg by the shellfishes were 0.36% and 0.29%, respectively, as compared with PTWI. The average monthly intake of Cd by the shellfishes was 6.64%, as compared with PTMI. The average weekly intakes of Pb, Hg by the cephalopoda were 0.5% and 1.72%, respectively, as compared with PTWI. The average monthly intake of Cd by the cephalopoda was 6.16%, as compared with PTMI. The average weekly intake of Pb by the crustacean was 0.05%, as compared with PTWI. The average monthly intake of Cd by the Crustacean was 9.17%, as compared with PTMI. In conclusion, the levels presented in this study are presumed to be safe for food consumption.
